My 1960 condo's ceiling's panels seem to have settled unevenly. Could I line the ceiling with something?

What methods and products would you suggest I use to line the ceiling before I paint? My living room/dining room ceiling is not even. I am in a condo and have no room to store the furniture in order to replace the original sheetrock(I think) .
