Repair holes in 100 year-old plastered ceilings (over lathing)

During the last century the house has had some settling that has caused cracks in the plastered ceilings and walls. Also, water damage from a roof leak has caused a section of ceiling plaster to fall. How can I repair it? Or find somebody to do it professionally? I live in south-central West Virginia. Thanks
